Quick cheese pie without filo pastry

This is a "lazy" cheese pie. Quick, with ingredients you probably already have, and easy, cause you don't have to make or buy a filo. Perfect for breakfast, school snack, picnic, and dinner combined with salad. Also, an ideal recipe if you want to get rid of the extra cheese you keep in your fridge.

how to make an easy cheese pie without phyllo pastry

Ingredients


1 cup milk (low fat)

4 eggs

1/2 cup strained Greek yogurt

1/3 cup olive oil

1 cup self rising flour

various cheeses (feta cheese and whatever else you have in your fridge)

1 teaspoon dry mint

sesame seeds and/or breadcrumbs

pepper

How to do it

  1. Crumble the feta cheese using your hands or a fork and grate the other cheeses.

  2. Crack the eggs into the bowl and whisk them lightly. Add the milk, the yogurt, then the olive oil and mix well. Finally add the flour. Keep mixing by using your hand whisk.

  3. Add the cheeses, the mint, season with a little bit of pepper, and mix again by using a spoon.

  4. Place the mixture in a Pyrex baking tray (25x35 cm if you want to make a thin pie). If you like you can sprinkle with a generous amount of sesame seeds and/or some breadcrumbs so that it forms a nice crust.

  5. Preheat the oven at 180°C (360 oF) and bake for 30-35minutes until golden brown.

Tips

  • I want to eat without guilt, so I prefer to use low fat milk and low fat grated cheeses.

  • Fresh eggs do make a difference in taste.

  • If you don't use a Pyrex baking tray, make sure you brush the baking pan with olive oil.

  • Use a smaller baking tray. No problem. Your pie will be just a little bit thicker.
