Zucchini pita


Do your kids eat zucchini? If not this is the way to do it.

Make this delicious Zucchini Pita. It will take you only 5 minutes to prepare. I swear it!

Buy fresh zucchinis from the grocery store. Wash them, grate them by using the large blades of the grater and then squeeze them with your hands so that they lose most of their containing water. Place the grated zucchini in freezer bags (quantity of 3 water glasses each) and defrost whenever you want to prepare this delicious pita.

Ready in: 5-10 minutes (5 minutes more if your zucchinis are not already grated)

Portion: for 4 (12 medium size pieces)

How to cook zucchini pita

Ingredients

3 water glasses* zucchini, grated and squeezed

1 water glass self-rising flour

1water glass* milk (preferably with reduced fat)

1/2 water glass* olive oil

2 water glasses* feta cheese, crumbled

4 eggs

2 tablespoons dry mint

1/2 tablespoon pepper

sesame (don't use in case of sesame allergy)

How to do it

1. Mix all the ingredients together.

2. Brush a baking pan with olive oil and dust it with flour.

3. Add sesame at the surface of your pita.

4. Bake at 170-180oC (330-350oF) for 30-40 min (until the surface is golden).

Tips

  • Try your feta cheese before you use it. If its not too salty, add to the mixture 1/2 tablespoon salt.

  • If you use a glass Pyrex pan you don't have to brush it with olive oil and dust it with flour.

  • If you don't have a self-rising flour, use an all-purpose flour and add 1 tbsp baking powder and 1/2 tsp salt.

  • After you defrost your grated zucchinis, and just before you use them to make your pita, let them drain for 10 minutes or squeeze them again with your hands.

  • 1 water glass is approximately 240ml (or 8 fl.oz). But it does not matter if your water glass is bigger or smaller. What matters is to measure everything with the same cup or water glass.
