Pancakes with Greek feta cheese and oregano

When it’s 6 p.m. and you're having everyone at home teetering on the verge of a meltdown, the takeout trap is an easy one to fall into.....believe me I know. If you are short of dinner ideas, make these Mediterranean Pancakes. Simple ingredients, quick in preparation, enriched with vitamin C due to the peppers, cheap and so delicious. And the best of all is, that by changing the additional ingredients, you can make a new pancake-recipe. Waiting for you to share it with us.

Portion: 10 medium cupcakes or 15-18 small ones
Main Ingredients

1 cup all purpose flour (or whole wheat flour)
2 teaspoons baking powder
3/4 cup milk (low fat too)
1 egg
2 tablespoons olive oil
1 tablespoon sugar
1 teaspoon salt
Additional Ingredients
1 horn pepper or 1/2 bell pepper (finely chopped)
1 teaspoon dry oregano
1 cup feta cheese (crumbled)
How to do it
Use your food processor and finely chop the bell pepper.
In a bowl, whisk together all the main ingredients, until they are completely combined.
Then add the bell pepper, the oregano and the feta cheese in the main ingredient bowl and mix well using a spoon.
Place a nonstick pan over medium heat and add 1 tablespoon of olive oil. Spread the oil evenly on the surface of the pan.
Use a large spoon to add spoonfuls of the mixture to the pan.
Cook (medium temperature) until the bottom side turns golden and when you see some bubbles form on the top side of the pancakes, it is time to turn them over.
It takes about 3-4 minutes cooking on each side.
Spray more oil in the skillet, and continue with remaining batter.
Makes about 10 medium size pancakes, or 15-18 small ones.
