Pork Stew "injected" with Vitamin C


Vitamin C helps in fighting bacterial infections and strengthening the immune system of our children. This quick recipe is a Vitamin C bomb. Bite sized pork pieces are cooked in a delicious Mediterranean sauce, made of fresh Tomatoes, colourful Bell Peppers and Orange Juice. My kids like it served with brown rice. Use a pressure cooker and minimise the cooking time to 20 min.

How to cook pork stew with bell peppers

​​​​Ingredients

1/2 kg. pork neck, boneless and cut into bite sized pieces

5 tablespoons olive oil

1 onion

1 garlic glove

3 bell peppers (red, yellow, orange)

1 tomato

1 teaspoon tomato-paste, diluted in 1/2 tea cup water

1/2 teaspoon sugar

orange juice (from 1 orange)

1 tablespoon dry thyme

salt, pepper

How to do it

  1. Use your food processor. Add the bell peppers, the onion and the garlic glove. Finely chop everything together.

  2. Take your pressure cooker / or a simple big pot and add the olive oil.

  3. Turn the heat on and sauté the pork bites until they get gold on both sides (2 minutes each side).

  4. Add the orange juice and stir well for 2 minutes.

  5. Then add the peppers, the onion and the garlic. Stir for 2 minutes.

  6. Finally add the tomato (blended in the food processor), the diluted tomato paste and 1/2 tsp sugar.

  7. Season with salt, pepper and dry thyme.

  8. Cover the pork with hot water.

  9. The pressure cooker needs 20 minutes to complete this delicious meal. If you do not have one, boil in medium temperature, until the pork bites become tender (30-40minutes).

  10. When it is ready take the lid away and cover the pot with a clean towel. Let it rest for a while. This trick helps the sauce to thicken and become less watery.

Tips

  • If your kids like eating their vegetables cut in bigger pieces, then do so. I use the food processor, because I do not want my daughter to detect the bell peppers. She will immediately place them aside and eat only the pork.

  • T his meal is freezer friendly. Make a double dose and save time for the weeks to come.

  • Side dishes could be a potato puree, or wholegrain pasta, or rice etc....
