Open air outdoor cinemas in Greece, always served paper bags with salty roasted seeds. Now its popcorn, hot dogs, marshmallows and tortilla chips. The hidden health benefits of pumpkin seeds are numerous. And of course, I regret all the times I kept only the flesh of my fresh pumpkin and threw the seeds away.

Hear this out: Pumpkin seeds have Heart Healthy Magnesium, Zinc for Immune Support, Plant-Based Omega-3 Fats, Anti-Diabetic Effects, and Anti-Inflammatory Benefits. Not to mention that are an excellent source of tryptophan, which is scientifically proven to be an effective treatment for anxiety. By consuming pumpkin seeds regularly, not only can you look forward to some decent sleep for once, which naturally reduces anxiety the next day, you’ll get a double whammy when it comes to lowering your anxiety level.
So eat your seeds in your salads, in your soups, or eat them like a snack.
My secret: Place the seeds in a big bowl full of water. In a few minutes they will float at the surface. Dry them with a piece of kitchen paper, season with salt and roast them in the oven on a parchment paper. It takes 5-10 minutes at 150oC (300oF). Happy Parents Movie Night!
