Mediterranean Beef Patties with oats and vegetables (Make ahead & Freeze)

Wednesday night asking myself what are we going to cook for tomorrow? No problem. I take my delicious Beef Patties out of the freezer (full of vegetables and fiber), and let them defrost in the refrigerator for the whole night. When I come back home from work, I just have to place them in the oven and prepare my kids favorite salad.
When you have the time (I usually do it on Sundays) prepare your Beef Patties and place them in the freezer.
It takes only 10 minutes, and it's a big time saver. Plus it’s a healthy and nutritious dinner kids love.
Hands on: 10 minutes
Portion: 10 large patties (or 15 medium size)
Ingredients
1kg (2.2 pounds) ground beef (passed once through the meat grinder
2 medium size onions (grated)
2 carrots (grated)
2 zucchinis (grated)
½ teacup oats
1 egg
1 tablespoon dry oregano
2 tablespoons parsley (finely chopped)
3 tablespoons balsamic vinegar
2 teaspoons salt
ground black pepper
How to do it
Use your food processor and grate the onions, the carrots and the zucchinis. Finely chop the parsley.
Mix all the ingredients and knead.
Shape into medium size patties. Press them in the middle so that the patties are not so thick.
Time to freeze them. Defrost and use them whenever you like.
Tips
If you want to bake them immediately, let the mixture rest in the fridge for ½ hour, then form large size patties (press them in the middle so that they are not so thick), place them on a hot nonstick pan (no oil needed) and bake them (5 minutes each side-medium temperature). Or line a baking pan with some parchment paper and place the patties. Bake in preheated oven (fan 180oC or 350 oF) for 40 minutes. Ideal for grilling too.
Serve them with rice or baked potatoes. Don’t forget the salad your kids like.
To save more time you can use frozen chopped onions and frozen chopped parsley.
