Grape Must Cookies (Greek Moustokouloura)


Yiayia Sofia had the best weekend of all. Having all her grandchildren together, helping her at the kitchen with her traditional Greek Moustokouloura Recipe. And everybody was singing the KOULOURAKIA SONG, a tradition that has come down from my mother to me, and now to my kids. It is something like the “Patty-Cake” song or the “Backe backe Kuchen” for my German friends, and we usually sing it the time we shape the dough into cookies. It goes like this:

And then the house smelling like cinnamon, and everybody waiting to taste those fresh and nutritious cookies, made with Love and Laughter.

Hands on: 10 minutes

Portion: at least 50 cookies

Ingredients

750-800 gr. or (26.5 - 28.2 oz.) or (1.65 – 1.76 lb.) all purpose flour

1 tsp. baking powder

½ tsp. baking soda

250 ml (8.5 fl. oz.) grape must

250 ml (8.5 fl. oz.) olive oil

125 g (4.4 oz./0.27 lb.) sugar

1 tsp. ground cinnamon

½ tsp. ground cloves

1 shot of cognac

How to do it

  1. Take a big bowl.

  2. Add the must, olive oil, sugar, ground cinnamon, ground cloves and cognac. Mix well.

  3. Sift the flour, the baking powder and the baking soda, directly into the bowl.

  4. Mix everything together, using your hands, until it becomes thick dough.

  5. Shape the dough into small cookies (at least 50) and place them on a baking sheet. You will need three baking trays.

  6. Bake in a 180* (350*F) preheated oven (air) for 20 – 30 minutes. If you like place the baking trays together in the oven (air) at once.

  7. Remove the cookies from the baking sheet and allow them to cool on a wire rack.

Tips

  • Add as much flour as possible, because the flour is what makes the cookies more compact and crisp.

  • You can add to your grape must mixture 80gr. black raisins, if you like.

  • You can replace sugar with honey.

  • The “grape must” should be in room temperature. Do not use it directly from your fridge.
