How to make prunes wrapped in bacon and stuffed with cream cheese

Ingredients

20 soft dried pitted prunes

10 slices bacon (cut in half lengthways)

1 package (8oz) light cream cheese

How to do it

  1. Soak prunes in one-cup water for about 8 to 10 minutes.

  2. Preheat the oven to 180°C (350°F/gas mark 4). Brush a baking tray with olive oil.

  3. Stuff each prune with 1-teaspoon cream cheese…or less.

  4. Cut each bacon rasher in half lengthways. Lay a strip of bacon on a chopping board; place the stuffed prune at the top edge and roll wrapping it tightly around the prune. Pierce a cocktail stick through the center of the wrapped prune to secure.

  5. Bake them for 10–15 minutes, turning over half way through cooking, until the bacon is slightly crispy on both sides.
