One Pot Beef and Cabbage Stew

This is a Beef - Cabbage Stew cooked for my kids the Mediterranean way. This means you need neither beef broth, nor beef bouillon to make the stew tastier. What you need is, to combine in your hot pot the aroma and the juices derived from a good piece of meat, a fresh seasonal cabbage, fresh tomatoes and olive oil. The good quality ingredients are what make your food delicious, nutritious and healthy. Go Mediterranean for healthy kids.

Ingredients
1kgr (2,2 lb or 35 oz) beef stew meat
(cut into 5cm or 2 inch cubes)
1 medium size cabbage (chopped)
3 potatoes (peeled & cut in two)
350gr (12,3 oz) tomato sauce or
4 fresh tomatoes blended
1 pinch sugar
7 tbsps olive oil
7 tbsps white wine
2 bay leaves
1/2 tsp. ground cloves
1tsp. smoked paprika (or sweet)
1 tbsp. dry thyme
hot water
salt, pepper
How to do it
Place a large pot over medium-high heat and add the olive oil. I use a pressure cooker, but its ok if you don’t have one.
Sauté the beef stew cubes until browned on all sides.
Add the wine and stir until it evaporates.
Add the tomato sauce, a pinch of sugar, the bay leaves, the ground cloves, the smoked paprika, the thyme, the cabbage, the potatoes and hot water (just to cover the beef). I added 500 ml of hot water in my pressure cooker. If you don’t use a pressure cooker, you might need 600-700ml hot water. Just be sure that your beef is covered with water.
Season with salt and pepper.
Stir to combine.
Place the lid on the pot, lower the heat to medium and simmer for 45 minutes until the beef is soft and tender. If you use a pressure cooker you only need 20 minutes.
Season with salt to taste (if needed) once the stew has finished cooking.
Tips
Make your Beef-Cabbage Stew kid friendly:
Cut the cabbage into small pieces (like when you make a cabbage salad).
Buy some fresh bread (we prefer natural leavening Sourdough), cut it in slices and let your kids dive a slice to absorb the juices of the stew. So tasty!
