Orange cake with olive oil and yogurt


A healthy choice to please my kids sweet tooth. The house smells of orange and vanilla and the kids can't wait for me to take it out of the oven. The Easiest cake, with simple ingredients, no mixer needed and hands on less than 15 minutes. Just do it.

Ingredients 3 eggs 175 g (5.9 fl.oz.) olive oil 150 g (5.3 oz) Greek strained yogurt

grated zest from 2 oranges 225 g (7.9 oz) self-rising flour 175 g (6.1 oz) granulated sugar 1 teaspoon vanilla extract

How to do it

  1. Preheat oven to 180o C (350o F) Fan.

  2. In a large bowl, whisk the eggs and then add the olive oil, the yogurt and the orange zest.

  3. Beat until all of the ingredients are combined and the yogurt is completely incorporated in the mixture. No mixer needed.

  4. Add the self-rising flour, the sugar and the vanilla extracts and mix with a spatula until you have a well-combined mixture.

  5. Grease and flour a cake or pan (10x20cm) and pour in the cake batter.

  6. Bake for 45-50 minutes.

Tips

  • When you take it off the oven, let it rest for 10 minutes and then remove your cake out of the cake pan.

  • You can use a low calorie yogurt, as long as it is strained.

  • Add some chocolate drops in the batter if you like.
