Tomato sauce packed with vegetables

This is the best-hidden veg recipe I make for my kids. Everything finely chopped into a tomato sauce. Goes perfect with all of your kids favorites: spaghetti, pizza, meatballs, or hot dogs. It is so tasty and so cleverly packed with nutrients. This is also something you will always find in my freezer. I mean come on! It only takes 10 minutes to boil some pasta, add this delicious sauce, and some grated cheese, and offer to our kids a super healthy meal.

Servings: for 8

Ingredients
800gr fresh tomatoes (blended) or tomato sauce
1 eggplant (small)
1 zucchini
1 carrot
1 bell pepper
5 mushrooms
1 onion
1 garlic clove
4+2 tablespoons olive oil
1 tablespoon wine vinegar
1 tablespoon sugar
1 teaspoon dry basilica
1 teaspoon dry thyme
salt
pepper
How to do it
Use your food processor and finely chop all the vegetables. Start with the onion and the garlic. And then finely chop the rest of your veggies.
Heat the olive oil (4 tbsps.) in a wide pot over medium-high heat.
Add the finely chopped onion and sauté for 4 minutes.
Then add the finely chopped garlic and sauté for 2 minutes more.
Then the rest of the vegetables, 2 tablespoons olive oil and sauté for 5-6 minutes.
Add the tomato sauce, the sugar, the vinegar, salt and pepper.
Cover your pot with a lid and cook in low temperature for 15 minutes.
Then add basilica and thyme and cook for 5 minutes more.
Turn of the heat off and cover the pot with a clean kitchen towel. Let it rest for 10 minutes.
