Avocado Pesto for our Kids Favourite Pasta


Trying to add avocados to your child’s food repertoire? Of course you do. Avocados and olive oil is a staple for the Mediterranean diet. They provide mono-unsaturated fats (the so called “good” fats), important for their growth and the development of their central nervous system and brain. Not to mention the heart health benefits.

This recipe is a good way to serve avocado to a child, that doesn’t want to eat it, if it is seen. So pick your kids favorite pasta choice and mix it with this nutritious avocado pesto sauce. It takes 5 minutes to make the pesto and 10 minutes to boil the pasta. It is amazing what you can do in 15 minutes for your kid’s health with such a few ingredients.

How to make avocado pesto sauce for pasta

Ingredients

500gr pasta (your kids favorite)

For the avocado pesto:

2 ripe avocados (medium size)

1 clove of garlic

50gr (1,8oz) cashew nuts (or other)

4 tablespoons olive oil

Juice from 1 lemon

20gr (0,7oz) basil

50gr (1,8oz) Parmesan cheese, grated

½ teaspoon salt

Pepper

How to do it

  1. Start with the avocado pesto. Add all the pesto ingredients to a food processor and beat until the nuts break down.

  2. Boil the pasta according to the instructions on the package.

  3. When ready, drain and transfer them again to your pot.

  4. Add the avocado pesto and stir to coat completely.

  5. Ready to serve. Sprinkle some grated Parmesan if your kids are cheese lovers.

Tips

  • Use wholegrain pasta to add some fiber to your dish.

  • You can replace cashews with walnuts or almonds or don’t add nuts at all if your kids face allergy problems.

  • If you use salted nuts, do not add more salt to your pesto.

  • Does your kid like Guacamole? You can blend it and make another avocado sauce for your kid’s pasta.

  • This avocado pesto can save your day. Toss it with pasta, use it as a healthy mayo substitute on your sandwich, spread it on toasted bread or use it as a dip for vegetables, bread sticks and crackers.
