Oven baked “Lavraki” (the European Sea bass)

“Lavraki” is the Greek Sea bass, and it is my kids most delicious and desirable fish (not to mention that it has very few thorns). In the Mediterranean Region you can easily find it wild caught, but it is also the star of the Greek fish farming industry. All over the Greek islands but also in mainland Greece, “lavraki” has its place of honor in almost every household and in so many different recipes.
If you end up all the time not buying fish because you just cant think of an easy way to cook it, this is the perfect recipe for you. To roast it whole in the oven, with Mediterranean simplicity. Olive oil, mustard, thyme and coarse salt. Add some potatoes in your baking pan to make a complete healthy meal for your little ones.

Serves: 4
Ingredients
Sea bass (1.200gr)
1 tablespoon mustard
3 tablespoons olive oil
+ 2 tbsps olive oil (to sprinkle before you roast)
2 tablespoons thyme (dry)
280 ml (9.5 fl.oz) water
4 potatoes (cut in 5 cm cubes)
coarse salt
pepper (optional)
How to do it
Preheat the oven to 220o C (425o F) Fan.
Rinse your fish and pat dry.
Cut the potatoes in to 5 cm cubes and boil them for 5-8 minutes in salted water. Drain and set aside.
In the mean time place your fish on a baking pan and brush them all over with mustard, thyme, olive oil and salt.
At the same baking pan transfer the lightly boiled potatoes.
Add some water (280ml) and sprinkle with some olive oil.
Roast for 30-35 minutes.
Tips
Your fish will cook more evenly and faster if you start it out at room temperature. So remove it from the refrigerator one hour before roasting.
This is an easy technique to roast fish, so save the recipe and use any fish you like.
To serve add some lemon juice.
