Greek Feta Cheese coated with pistachios and honey

Did you know that Greece has the highest consumption of cheese per person in the world? You would vote for France wouldn’t you? Cheese plays the role of protein in the traditional Greek diet. It is something to go along with the amazing variety of vegetable dishes. And the most popular, the one you will find in each and every home is the famous Greek Feta Cheese.
This recipe combines three classic Greek ingredients. Feta cheese, pistachios from the island of Aegina and thyme honey. A mouthwatering combination for warm, lazy, summer late afternoons.

Serves: 4

Ingredients
2 pieces of feta cheese (0.5cm thick)
1 egg (lightly beaten)
1 cup flour
1 cup pistachios (unsalted-grated)
2 tablespoons sesame
olive oil for frying
2 tablespoons honey
How to do it
Take three wide bowls.
The first one is for the flour, the second one for the beaten egg and at the third one mix the pistachios with the sesame.
Dip both sides of the feta cheese pieces in the flour bowl, then in the egg bowl and finally in the pistachios bowl.
Place a pan over medium heat.
Add a generous amount of Greek extra virgin olive oil and heat.
To check if your oil is hot enough dip a small piece of phyllo in to the oil. When it starts to sizzle, you are ready to fry.
Place the feta cheese in the pan, seam side down.
As soon as they become golden on the first side, flip them over and fry them until they are golden and crunchy on the other side too.
Transfer them to a plate lined with some paper towels. Let them drain for about 2 minutes.
Drizzle with honey.
Tips
Use low fat feta cheese if you are watching you diet.
You can toast the sesame seeds for a more intense flavor. Heat them on the stove to on medium heat for about 1-2 minutes, shaking the pan.
