Oven Roasted Potatoes with red peppers and smoked pork

The easiest thing to do when there is no energy to cook, is to peel off some potatoes and “throw” them in the oven, right? To make this a main dish with vitamin C and the needed kid-friendly touch, try adding some sweet red peppers (aka Piperies Florinis) and smoked pork or country sausage. My Yiayia from Mani used to make this with “Siglino” (local smoked pork). If you have access to Cretan products, replace the country sausage with “Apaki”.

How to make easy oven roasted potatoes with smoked pork or country sausage

Ingredients

1kgr (2,2lb) potatoes

500gr (1,1lb) country sausage or smoked pork (aka Siglino)..

(cut in medium size cubes)

3 red peppers (finely chopped)

2 big onions (or two small) (finely chopped)

6 tablespoons olive oil

1-teaspoon paprika (sweet or smoked)

salt

How to do it

  1. Preheat oven to 200oC (390oF) Fan.

  2. Peel the potatoes and cut them into 4 pieces or into 2-3 pieces if they are small.

  3. Transfer them to the baking pan you use for the oven, with sweet paprika, salt and olive oil. Toss until the potatoes are well coated.

  4. Roast in the oven for 40 minutes until they get lightly soft. Turn the potatoes 2 times so that they can be baked evenly.

  5. In the mean time take a non-stick pan, and sauté the smoked pork (or sausage cut in medium size slices) for 1-2 minutes.

  6. Use your food processor to finely chopped the red peppers and onions. Add them to the pan.

  7. Sauté them for 2 minutes until they get slightly soft.

  8. Take the baking pan out of the oven for a while and spread everywhere the sausage (or smoked pork), the peppers and the onion.

  9. Quickly place the baking pan back into the oven and bake for 10 minutes, until the potatoes get soft and golden.
