Try this easy pasta recipe. It is the way I found to add pumpkins to my kids menu. Give it a try. After all it’s so easy!
Prep. Time: 5 minutes (if the pumpkin is peeled)
Cooking Time: 20 minutes
Serves: 4
Ingredients:
For the pumpkin purée:
500 g (17,6oz) pumpkin (net weight)
Boiling water
For the sauce:
4 tablespoons olive oil
1 large onion, finely chopped
5 bacon stripes, cut into small pieces or...
any other smoked pork you like
1 tbsp. dry sage, finely chopped
150 g (5,3oz) Gruyere cheese, grated
Pumpkin purée
For the pasta:
500 g (17,6oz) wholegrain pasta
Boiling salted water
For serving:
Extra Gruyere
How to do it:
Place a medium pot over high heat.
Add the pumpkin (peel and seeds removed) cut in big pieces and boil for 5-8 minutes.
Use your blender or your food process, add the boiled pumpkin and make a purée.
Take a big sauce pan, place it over high heat and when it’s hot add the olive oil.
Sauté the finely chopped onions together with the small bacon pieces for 2-3 minutes.
Add the sage and the pumpkin purée and stir well for another 2 minutes.
Remove the pumpkin sauce from the heat and add the grated Gruyere cheese. Stir until the cheese melts.
Boil some wholegrain pasta in a pot full of salted boiling water.
Drain and add the pasta to the pan with the pumpkin sauce.
Add some pepper if you like and some salt if needed.
Serve with extra Gruyere cheese.
