Pasta with sautéed Greek Salad ingredients

This pasta dish filled with Mediterranean flavors is the easiest thing you can prepare when you are desperately hungry. Simple ingredients, beautifully combined together, will certainly make this pasta dish a family favorite.

Serves: 4

Ingredients
250gr (8oz) pasta (penne, or fusilli, or spaghetti)
2 tablespoons olive oil
60 gr (2oz) Greek feta cheese (diced)
12 black olives (minced)
1 green pepper (diced)
1 onion (finely chopped)
2 cloves garlic (minced)
½ teaspoon dry oregano
salt
pepper
To serve
Parsley (coarsely chopped)
How to do it
Bring a large pot of salted water to boil and cook pasta according to package directions.
While the pasta is cooking, place a large sauté pan over medium heat and add the olive oil.
When hot, sauté the onion and the green pepper for 2 minutes.
Add the minced garlic and sauté for another 30 seconds.
Finally add the cherry tomatoes, season with salt and pepper and sauté over medium heat for 3 to 4 minutes until cherry tomatoes are soft and wilted and have begun to release their juices.
Remove pan from heat.
Add the olives, the feta cheese and the oregano to the pan. Toss gently to combine.
Drain the pasta and add it to the large sauté pan.
Sprinkle with some pure virgin olive oil among with freshly chopped parsley on top and serve.
Tips
If the pasta seems dry, reserve ¼ cup pasta water to add it to your sauce.
If you like you can also add some capers in your sauce.
Instead of oregano you can use basil leaves (finely minced).
