"Plaki" is a Greek way of cooking fish in the oven with tomatoes, potatoes and herbs. It's a popular cooking for big or medium-sized white fish such as red snapper, blackfish, cod, flatfish (common sole), sea bream or swordfish.
A delicious low calorie meal and a perfect way to get your kids eat fish.

Ingredients
100 gr (3,5 oz) olive oil
300gr (10,6 oz.) onions (finely chopped)
2 cloves garlic (finely chopped)
100gr (3,5 oz.) celery (chopped) - optional
1 kg (2,2 lb.) potatoes, peeled, cut in wedges
800 ml (28,2 fl.oz.) whole plum tomatoes with juice, chopped
250 ml (8,8 fl.oz.) retsina wine (or white dry)
300ml (10,2 fl.oz.) vegetable broth
2 tablespoons breadcrumbs
(1,3 kg – 2,8 lb.) 4 steaks black sea bass, or wild striped bass, or other white flaky fish
2 tablespoons parsley (chopped)
4 bay leaves
salt
pepper
How to do it
Everything in a saucepan (besides the fish, the parsley and the bay leaves).
Season with salt and pepper according to taste.
Stir everything with a spoon and bake in preheated oven (170oC) for 30 minutes.
Take the saucepan out of the oven and add the fish, the parsley and the bay leaves.
Bake for 45 minutes. Mind that the fish is covered with the liquids in your saucepan.
Ready to serve.
