Greek Easter Cookies (aka koulourakia)


The most delicious crumbly, orange or lemon - scented, authentic and traditional Greek Easter cookies. Easy and very quick to make.

If you visit Greece this Easter ask for “Koulourakia”;the perfect treat with milk, coffee or hot chocolate.

Serves: 40-50 cookies

Ingredients

750 g (1,65 lb) all-purpose flour

400 g (14,1 oz) butter, cold

250 g (8,8 oz) granulated brown sugar

2 eggs

zest from 2 lemons/or oranges

1 teaspoon baking powder

For brushing

egg wash (1 egg yolk diluted with some water)

How to do it

  1. In a mixer’s bowl, add the butter cold and cut into small pieces together with the rest of the ingredients.

  2. Beat for 3-4 minutes until the mixture becomes fluffy and elastic.

  3. If your mixture is too soft and sticky, let it rest in the refrigerator for a while.

  4. Preheat oven to 170* C (340* F) Fan.

  5. Place the dough on a working surface.

  6. Shape the dough into different shaped cookies and transfer to 2-3 baking panslined with parchment paper.

  7. Brush with egg wash and bake until they get a golden (about 15-20 minutes).

Tips

  • Prepare the dough now and keep it in the refrigerator covered with a plastic membrane for one week. Bake fresh cookies any time.

  • To keep your cookies fresh longer, store them in metal biscuit tins.
