Mandarin Orange Cake

Christmas decorated muffins made with olive oil, Greek yogurt, fresh Mandarin orange juice and a lot of Mandarin zest. Make them together with your little ones. It is so easy and so much fun!!!

Serves:              12 muffin cups

Ingredients

For the cake

400 gr (0.88lb/14.1oz) all-purpose flour

1 tablespoon baking powder

pinch of salt

2 eggs

2 yolks from eggs

60 g (2.10oz) olive oil

350 g (12.3oz) granulated sugar

100 g (3.50oz) mandarin juice

200 g (7.05oz) strained yogurt

zest from 6 mandarins

1 teaspoon vanilla extract

For the frosting

60 g (2.10oz) butter, room temperature

200 g (7.05oz) cream cheese

250 g (8.80 oz) icing sugar

½ teaspoon green food coloring paste

Toppings

Sprinkles or crushed nuts, or tempered chocolate

How to do it

For the cake

  1. Preheat the oven to 170ο C (340ο F) set to fan.

  2. In a bowl add the flour, baking powder and salt.

  3. Mix everything with a spoon.

  4. Take another bowl and add the eggs, yolks, olive oil, sugar, the mandarin juice, yogurt, zest and vanilla extract.

  5. Mix well with a hand whisk until the sugar melts.

  6. Then add the solid ingredients into the bowl with the wet ones.

  7. Mix again with a spoon.

  8. Add the mixture inside a buttered and floured 30 cm cake pan.

  9. Bake for 40 minutes.

  10. Let it completely cool on a rack before you add the frosting atop.

For the frosting

  1. In a mixer’s bowl add the butter, the cream cheese, the icing sugar, and the food colouring.

  2. Beat with the whisk attachment for 3-4 minutes until all the ingredients are fully incorporated

  3. Add the frosting on top of its muffin and decorate with whatever you like.
